They were giving up meat in a last ditch effort upon their doctors' suggestion - you could see that they saw it as a great sacrifice." So says Ms. Shai Tamayo, CEO of My Goodness Cookies, one of the country's foremost experts on vegetarian cooking and nutrition, and a strict vegetarian herself since 1974.
"But nowadays most of my students are from Manila's mainstream society --educated young men and women who have decided on their own that they want a wholesome alternative diet for their kids or aging parents. Positive and determined, they want to make healthy changes for themselves and for the environment. There is very little need to convince or educate. they often bring cookbooks and make requests for specific dishes. The times have changed talaga."
